Foods high in fat, salt, sugar send strong reward signals to the brain. That means it tells you "Yum!"
Meats and dairy (especially cheese) are very high in salt and fat. So? This section is not about diet, nutrition, it's about taste. For those of you trying to convince people to switch to a vegan diet, cutting the fat, the sugar and the salt out of your vegan recipes is the very worst thing that you can do.

We could save millions of life and a lot of natural resources by simply starting with that. Make our food delicious before worrying about anything else when it comes to cooking for non vegans.

There is a bit more to what makes food taste good than just the fat, sugar and salt but it's the most important.
Spices and herbs! There are many examples like the sausage: let's take the Italian sausage: OK you guessed it, it's full of salt and there is a ton of fat, the rest is some delicious and healthy herbs. You can look up non vegan recipes and find out about the herbs and spices and make a dish that taste fantastic, probably better than the original.
The taste of butter! Butter is a big thing for a lot of gourmet people out there, whether they know it or not. It's in a lot of recipes and has a very special creamy taste to it. Earth balance has a taste equal to butter, it's a great substitution and I know it has palm oil in it and some of you readers won't buy it for that reason, and I know has far as nutrition goes you could really go without it, but again this is the "TASTE" section and this section will save many lives! Priorities!
